It will be a 6/6 creature - Bear Human Soldier.

Cytoshape's effect acts in layer 1 - Gideon becomes an exact copy of Grizzly Bears (so a 2/2 creature - Bear).
Gideon Jura's effect acts in layers 4 and 7b:
- in layer 4, the effect says “becomes a Human Soldier creature that's still a planeswalker.” This exactly means that it gains the creature type and the Human and Soldier creature subtypes, but retains any prior types, supertypes, or subtypes it may have at this moment. In particular, it doesn't mean that it becomes a planeswalker if it's not one. It retains the Bear subtype it gained in layer 1.
- in layer 7b it becomes 6/6.
